Usually a good way is to check out the size of the fish compared to the brightness of its color; an inch long cichlid fry should not have the full adult coloration yet. Also check for females which tend to have drabber color than males, having color just as bright, or moreso.
 
I agree, fish that are small and have adult color is often a sign. I see this the most in discus and in african cichlids.

Likewise, adult fish with unbelievable color can be from hormones too.
