how big would a tank have to be to house a spotted gar and brown bullhead catfish?
 
the footprint you will need for an adult florida should be comparable for a bullhead long-term as well. My only suggestion would be to make sure your filtration is deffinately over-kill. Catfish in general are hard on a filtration system.

would It be enough for these monsters? it will be my show tank decorated with drift wood, hair grass, water lilies, and duck weed with a garden soil substrate. Is this decor suitable? I also have a 55 planted and a 10 gallon puffer tank. I just wanted a monster tank because I have always wanted monster fish and since both species are native to my area I thought why not? question about the gar though, do they have a distinct personality or are they all the same like stupid tetras?

Yes, that aquarium will be plenty big enough for an adult spotted gar and a bullhead. The bullhead might root up some of those plants, so you might want to put rocks around the base of the plants. Gars have fairly distinct personalities; they all tend to associate their keepers with food and often will beg for food when you're around the aquarium.

tilpaia, shrimp, and pellets are always a good choice for a staple. I am waiting for my gar to get a little bigger so I can get them off live feeders

Keep them on live feeders until they get to be around 8" long, then switch them to a pellet-based diet. Tilapia, shrimp, and other seafood can be used to supplement their diet; algae wafers should be fed to them occasionally as well.

250 is good but be careful putting a gar into a large tank like that, how big is the gar when you get it? if it is small then do not put it into a big tank, you don't want it to hurt itself, gars do that sometimes
