In theory.....
Breed with normal variant first
F0 gen: zz x ZZ
= F1 gen: Zz, Zz, Zz, Zz
Produces normal-looking variant with recessive gene

Now breed the F1 offspring
F1 Gen: Zz x Zz
= F2 Gen: ZZ, ZZ, zz, zz
Half of these will display the recessive gene and the other half the dominant.

You can than breed zz x zz to get 100% recessive offspring, if they remain fertile to that point

Mind you, I am an engineer; not a geneticist or biologist.

Sadly, it dosn't happen in platinum.
but it's still useful when you try to breed albino fish.

Platinum fish can came out from only luck.
Like when breed Aligator gar in my friend's farm, they lays around 50,000 eggs at once and there are only around 2~30pcs of platinum comes out.

and most of platinums are born too weak so most of them are die before sale, so only around 5~10 platinum alligator gars survive from one spawn.

Sad thing is most platinum fish come up from forced hormonal inbreeding.
They pump em with hormones to induce breeding since most of your general tank busting monster fish rely on migration to breed naturally.
The inbreeding creates the weird mutations in them. Then they just breed the fish with mutations to eachother and that's how we get as many platinum fish as there are.
