how do you make sure your tank is level?

So I want to get a 120g, and have been doing a lot of research. I plan to bridge the joists under the tank, as well as install jack posts under the joists for extra support. The tank will sit parallel to the joists, which is why I am adding so much support. The issue right now is the floor I want to put it on is not perfectly level. Ive attached an image of how unlevel my current 29g is to illustrate. How do people normally deal with this? I thought of putting wooden shims under the stand, but would this be a longer term solution?

What I did was put a piece of 1/2 plywood under my tank stands. Then use shims between the plywood and stand to make it level. I use the plywood so I don't damage the floors.
 
How big is your tank? Has the tank become less level over time? Also I imagine the depth of the shim relates to the weight of the tank
and you cant adjust the shims when its full

Tank size is 2x 6ft 125s
I leveled pre water and over time has not changed.
