i am planning to add a small endlicheri to a 125 gallon with a 5'' spotted gar. the endlicheri stocks at the LFS are usually 2'' to 3''. i am afraid that the gar would attempt to predate upon it. the gar grows considerably each time he is fed so i was wondering how long he can go without food to temporarily slow down his growth, or would doing so cause him stress and stunt it's growth?

A small gar should have constant access to food.
If you want an endli with it I would either set up a new aquarium as a grow out or look into dividing a larger aquarium. Another note I'm hoping the gar is not currently in the 125. If it is you are risking a broken back with a gar that small.

your best bet would be to feed it constantly like stated. then after your gar is a larger size get your endli. thats the way i did it and it work out perfict
