How long can fries stay with parents?

it depeneds on what fishYep, firstly it depends on the species. Say with convicts, they're really good parents and a lot of the time the fries don't even need to be separated.
However, each individual cichlid is different, and you may get a particular fish that just takes damn good care of their fries ALL the time, or you could get those that eats their fries all the time.
Also note that the first few times a cichlid spawn, they may end up eating the eggs/fries out of inexperience.

Some fish would snack on them as soon as they pop out...others work together to raise multiple generations of offspring.

It usually doesn't come down to size, it usually happens when they are ready to/ have spawned again if they do eat them.

or they could hatch and your male could go bananas and try to kill the female ... and then you could lose your fry in your 180 gallon , and not know if there alive or dead like me.....
