How long should I wait?

Alright so I've been cycling a 180 gallon for about 4 weeks now. I added pure ammonia, and guppies to help the process. The guppies are alive and breeding, and the water parameters are as follows:

pH: 8.0 (Same as tap water)
KH: 8
GH: 2
Ammonia: 0
Nitrite: 0
Nitrate: 0

I added the sand I bought as substrate last night (100 lbs) and it took 2 hours to clean it all before I added it! But it looks great and barely clouded my tank at all. My main question is how long should I wait to move the fish over that are about to out grow my 75 gallon? Will all the sand I added cause another cycle because now there is a lot more surface area?

My 75 gallon parameters are as follows:

pH: 7.8
KH: 10
GH: 2
Ammonia: .25 PPM (I recently had a little problem in another tank and had to add some fish to it as it normally reads 0)
Nitrite: 0
Nitrate: 0

Both tanks run at 80 degrees F.

My fire eel and my P.ansorgii are the ones I want to move over since it was Africans I had to move into my 75 quickly the other night. They don't cause problems, other then eating my P. ansorgii's food and making my fire eel hide. I feed my eel by hand so no worry on them stealing his food.
