How many is too much?

I have a 360 gallon with 2 Convicts, 2 Red Jewels, 2 Neetroplus Nematopus, 1 Salvini, 2 Hoplarchus Psittacus (True Parrot), 1 Black Belt, 1 Synspillum, 1 Melanarum, 2 Pink Fenestratum, 2 Nicaraguensis, 1 Geophagus Brasiliensis and 2 pleco's.

I am not sure when it is too much, they range in size between 3 to 6 inches at the moment. If I have too many I would probably remove the Salvini, and the Brasiliensis . Do I have too many Cichlids, if so how many should I take away, they all look good, with exception of the Salvini and Brasiliensis. The Brasiliensis looks like he is not getting enough to eat and they Salvini have not established a area they she could claim...

I have the tank landscaped good...

Can anybody tell me what good and bad as far as too many...
 
With big tanks like that, it's a lot harder to say than with smaller tank sizes. In my opinion, you are fine as long as the fish are not killing each other and seem to be happily co-existing. That sounds like a pretty decent stock to me. I would wait until the fish are max size, and deal with any problems that may develop along the way.
