How often do vieja hybridize?

Obviously kamfa flowerhorns exist, so it's gotta be relatively frequent, but I really like male zonata and female breidohri, but am having a hard time picking between one or the other. I am typically one to go for the "why not both" option with regard to the species themselves, but given the fact that I like the opposing sexes of both species, I also don't want the tank being terrorized by a hybrid pair.

I've had a few accidental hybrids with them. Crossed with Texas, Midas, Red Devil, and Trimaculatus. Not quite convicts, but not really picky.

They will readily hybridize with other species, and some sort of vieja is probably included in most popular hybrids like you mentioned.
I think a male Zonatus and female Breidohri would most likely pair up if kept alone. If not, the male would probably bully the female, unless they were in a community with other similar fish to distract them. In something like a 125g with these two fish, I would think long term success is pretty unlikely unless they did pair up. If you do have a large community tank (would need to be 6ft) with other cichlids, you could give this a shot, but would keep an eye on them.

Yeah it'd be a big community with smaller cichlids but I'm not gonna risk the two vieja... Now the question is which one I'm getting
