For wood you can't use softwoods but you can use any hardwood that looks good. This refers to the type of tree not the hardness of the wood. Softwoods/evergreens are trees that often keep their needles year-round. Some example are: pine, cedar, douglas fir, hemlock, redwood and spruce. Hardwoods have a leaves, produce a fruit or nut, lose their leaves and go dornant in the winter. Examples of hardwoods are: oak, walnut, cherry, apple and maple. Some great looking wood can be found on the banks of creeks where the winding roots of hardwood trees can be seen and also after a bad storm when massive trees have fallen over and their roots are exposed.

Almost any hardwood leaves can he used but they should be collected from the ground in the fall after the tree has shed it, not pulled from the tree. The tree first pulls nutrients from the leaf that you don't want in your tank.

If you have moderately soft water (low alkalinity, KH/a pH lower than 7.6 taken from your tank about 24 hours after changing the water) you need to be careful adding leaves. Some leaves release more tannic acid and erode KH more as Stanzzzz7 Stanzzzz7 stated. Oak are great as there are so many types.
 
Just keep in mind the D/W and leaves will lower PH naturaly, and possibly add a lot of taninns...
