How to tell if a datnoid is stable?

I have two datnoids an AT and a IT. On other threads I see people calling othee tigers stable and unstable. Why is that? And how do you tell?

Stable is just like in your pic, unstable dats are dark. And before you ask no one knows why they go stable or unstable

Colors have nothing to do with health i have an 11 incher whos always dark but completely healthy
 
Then what's the definition of stable and unstable in terms of datnoids?
