Do any one know why most of the midas or red devil we bought from lfs or pet shop stay small head? But I had seem some of midas has really huge head, are they from different breed?

You are the last person who should be giving advice...
RD's develop humps depending on numerous factors...SOME including....

1.Genetics...(possibly your lfs's don't carry RD's with a strong lineage of Nuchal Humps)
2.Water Quality
3.Persona...(Most large nuchal humps can be related to how dominant they feel in their surroundings...especially in the presence of females)

+1

Also keep in mind that females typically won't grow humps. You probably know that but just in case you didn't there it is.

The majority of fish labled "Red Devils" sold in the LFS are in fact a cross between two species, A. Labiatum and A. Citrinellum. Of the two species, only A. Citrinellum will develop any significant nuchal hump. More than likely any hump will depend greatly on how much of the "genetic soup" the fish gets. The nuchal hump has also been referred to as a "nuptial ornament" for obvious reasons. Females can get a nuchal hump, but it is predominant in the male of the species. It can come and go quite quickly throughout the fish's life...and as indicated during breeding.

Here's one of my female Citrinellum with significant "humpage".

Beautiful female speciman you have there...Breed her with a massive male...

Keeping a mirror up against the side of the tank will generally put any male "Midas Devil" in territorial mood...The adreline rush it gets from attacking its reflection will cause its nuchal hump to gradually grow...Most of the time it works....A couple of stores here excercise their flowerhorn this way....
