Why is it I like everything I can't have
Everybody has fish like that. I want a hammerhead shark, but that's not going to happen.
Nobody can tell you what to get though, and working at a LFS myself, I see that 95% of customers get fish that they cannot adequately care for (feeding, tank size, temp, etc). If you truely want the staple monster fish from your LFS, go for it. Or you can wait a little bit, do some research (I suggest fish atlases, Dr. Axelrod's atlas is the best choice) or even aqualandpetsplus website and see what kind of fish there are.
If you use the book, scientific names are only provided. Google that name, and do some research, and it should give you common names. If you aren't getting common names, chances are LFS don't get those fish in often and you can try a similar looking fish with the same genus name (the first word in the scientific name such as boulengerella).
Ask reputable LFS about the fish you are interested in and ask if they ever get them in. If not, save up and try aquabid.
It's really not that hard.
Also, common sense pays off. Mosaic gar in an 80 gallon? Not gonna happen. That is a bad recommendation. A good recommendation would have been a footprint, or a standard tank size. I would say an adult need 36x18" just from what I seen. Any longer than 4 feet and they tend to smash up their beaks since they can achieve greater bursts of speed. If you just look at them in the LFS and picture them twice as large it should give you a good idea. That is what I have concluded from watching them at my LFS.
Ask employees about behavior too. They work with the fish all day, and chances are they had them for a few weeks.
And if this really isn't your style, just buy the fish and what happens, happens. It's not really ideal, but some people just don't like searching.
