I have 7 fish tanks and people love seeing them, but I need a center piece for my whole room and my biggest tank is 75 gallons any suggestions?

go brackish and get a Ceylon puffer

A green terror, salvini, or medium sized (8-12 inch) pike cichlids would work well, any medium sized cichlid really.

Another fish you could get could be a type of sunfish (red breasted, green, pumpkin seed, warmouth, rock bass, bluegill, etc.). Make sure it's legal to keep them in your area

Great idea. I was thinking of getting Exodon before I went with my Fh. But my wife wasn't too keen on the mini piranha like fish idea.
