idea on how to ancor plants down so large fish cant move them?

Try using a small/shallow pot with big pebbles/rocks on top of the substrate in the pot and then bury it into the tank substrate. It's worked for me in the past.
 
i use river rocks or slate around the base of the plant, fairly cheap and u can make it look presentable
 
I learned from my cousin to drill holes in the rock and use fake plants from Michaels and push the end into the hole you drilled.
 
Have had good luck with the rock/drill/crazy glue.
Fishing sinkers have worked great where I didn` want to use rock.
 
I was thinking about using egg crate and zip tying the plant to it and burying it under the gravel and placing some larger rocks around it. That would probably work pretty well.

the slate with holes is a good idea too ... allso would look cool if you silcone some in the substate onto the slate . incase some of the fish move it around
