Ideas for 10gal emersed plants?

Hello everyone,
I am looking to put together a 10gal planted shrimp tank. I've got a few mosses in mind and a floating plant, but I would also like to have at least one largish (relative to a 10gal) emersed plant growing out of the surface of the water from the bottom substrate. I would like to stay away from plants that humidity needs. Any ideas? Thank you!

I looked a little at BOLBITIS HEUDELOTII but I don't know much about it...
 
Spider plants, pothos and cabbage are what have worked for me so far. :D

From substrate to surface? Find a tall lucky bamboo. That should root up and do well if emergent.

Yeah I've looked at that a little bit, but it seems like they need a fair amount of nitrogen when emersed? Would a shrimp tank offer enough? I am trying to stay away from fertilizers because I am hoping to take this tank along to college with me and have it as low tech as possible. But thank you I'll try looking into swords more!
 
You could try any of the sedges, rushes or even some grass species. They should be coming more prevalent with pond season arriving.
