Background:  I was actively keeping fish a few months ago but stopped because the nature of my work prevented me from taking care of my fishes properly. So, I sold them and some of the tanks.

I used to have a 75G, a 35G and a lot of 15Gs. I used them to keep cichlids and live bearers: a GT + albino oscar on the 75, a Texas on the 35, a breeding pair of Convicts on 1 of the 15, a red Jewel on another, and the rest are grow out tanks for the convict frys, breeding tanks for swordtails and plattys and isolation in case some fishes get sick. It was sad to sell them an cull the frys. But I guess it was the better choice than not taking care of them properly.

But now that I have a better job and more time on my hands, I can start keeping fish again!:headbang2 So I need suggestions on how should I stock my 4 tanks. I still have the 35G, and 3 15Gs. All of them has just finished cycling.
So what should I put there? I love cichlids and though about putting a GT on the 35 and add 5 tiger barbs with it as his tankmate. How about the other tanks? any suggestion?

Tiger barbs might nip up the GT, GT might eat the Barbs, or they could live in harmony...that's a hard call. I wouldn't try it, myself.

With the four tanks you could do a livebearer program. Selective breeding for a new trait, etc. Of course, nine or ten tanks is better, but progress could be made with what you have, especially if you divide some up a bit.

Have you considered improving the crappy colors of guppies? Most pet store gups are washed out turds compared to wild strains. Maybe you could get those vibrant, excellent original colors into some larger-bodied, fantail lines? Just a thought.
