Seem like umbee are a lot quicker to give up on a fight when it's not going there way and also don't take punishment as well

That cannot be the sole difference between the 2 from just personal experience...
Every individual dovii and umbee will vary in terms of aggression and fighting.
Generally, dovii's seem to be more aggressive at a younger age. But put the biggest umbee against the biggest dovii and who knows what will happen

both of them are just brutes I dont think they are good fighters .. They prove better in locking jaws.. And I think the fish with the bigger mouth and will in the fight got the higher chance of being the winner.
Doviis are real durable and tough with big bites. They are the toughest cichlid starting at sub adults man pants down. I've witness their carnage from fish stores to home.
But I beleive pound for pound there isnt a dovii nor umbee that can take on my Midas.

^^^^ agreed i have seen some midas take on doviis their size and put them to shame, IME midas dont give up, they will fight until every last scale on their body is gone
You guys think Midas are the best fighters? A dovii the same size as a mid-devil not fair 9x out of 10 the dovii would be a lot younger
