Don't question your good luck. That's one of the most colorful Pacus I've ever seen. As long as he's eating & otherwise acting normally, probably a genetic predisposition.
 
Congratulations on your stunning Colossoma macropomum. Most of us have the very common run of the mill red bellies. Perhaps yours is a color morph or a hybrid. Or maybe all black pacu babies are light colored (I don't know) Many black pacu develop a greenish look as they mature like this one

We have a member of FB Pacu Fish Keepers who had a baby black pacu. The baby was quite light colored but has now developed the dark coloration typically seen with black pacu. Jake's baby pacu:

I have no idea why it changed, but it’s the prettiest pacu I’ve ever seen:)

I agree with PacuMom that this looks like a true black pacu. Why the colors are getting washed out, IDK. I grew our pair from around 8" to the current 28". They have never had this phenomenon you are describing.

Shooting in the dark, I remember stories of fish changing colors when some chemicals and aerosols were used for cleaning around their tank and supposedly got in the water making fish exhibit unusual color changes.

This may or may not require the genetic predisposition mentioned above.

I doubt this is stress, but it's possible too.
