Is there any benefits to add a 3rd canister?

I've been tinkering with the idea of adding a 3rd Ehem 2028 to boost my filtration to a new level. My current setup is a 5x2x2 150g with two Eheims 2028 canisters, Emperor 400 HOB Filter, Coralife 18W UV, and Maxijet 1200 powerhead. I love the look of super clear water. Do you guys think my water can be clearer if I add a 3rd Eheim 2028?
 
How clear is your water now? It sounds like you have plenty of bio filtration, so whatever filter you add you can make it pure mechanical. If you aren't using any sort of chemical filtration, you could try some carbon and/or purigen which can give the water that extra crisp look.

It's clear as drinking water. I figured the tank could benefit from more bio filtration just in case I am late on my water changes. Do you think it's worth adding another filter?
 
it can definitely be worth it, if one or more of your filters ever took a nosedive, you'd have another one running that could keep up the filtration.
also is nice to have a filter ready if you ever set up a brand new aquarium, just transfer that over and add fish right away.
 
The upside is more bio, mech and you would always have a filter setup and ready to go at a moments notice. The downside would be the extra cost to run it. I have three on my 90 and 2 + 2 hobs on my 60. I like redundancy and I've always got fully matured bio ready to go for qt or future tanks. I like redundancy.

Neccessary .... No, but if you can afford it go for it.

Being late with a water change won't effect the biofilter. A water change removes nitrates that have built up from the biofilter converting ammonia-->nitrite-->nitrate. As long as your ammonia and nitrite is always 0, you don't need any more biofiltration.

Personally, I say another filter is always worth it. But as I said before, the extra filter is to take your water clarity to a new level. To achieve this I would use the additional filter for almost entirely mechanical filtration, maybe a very small bit of biomedia (just for some extra redundancy), and some carbon and purigen for chemical filtration. Carbon needs to be replaced which costs money, though not much, but it will also extend the life of purigen so that you don't have to regenerate the purigen as often. If you don't want to spend the money regularly on carbon, then go with some extra purigen.

Short and sweet, NO.
You have everything you need to get that, "fish floating in air" look, if you don`t already have it.
Suppose an investment in a Diatom water polisher, used intermittently, might help get whatever level of clarity your looking for.
Or not.
You might already have water as clear as it can get.
