If I take media from my 500 gallon fully cycled tank and 240 gallons of water from that tank and fill up a 240 gallon tank. I can instantly load that bad boy with fish correct? Or should I still wait for some reason before adding fish?
Don't use the tank water, that's just adding dirty water. The mature media being added needs to = the bio load in fish. So add slowly, while monitoring water parameters such as ammonia/nitrites. Also hold off on feed for a couple days, then feed sparingly for the first week or two while the bacteria play catch up.

Planktonic bio-bacterial spores (in old water) do next to nothing for creating an instant cycling.
Nitrifying bacteria are sessile, meaning they live as biofilm on solid surfaces, which is why we use solid objects like bio-balls, ceramic rings, and other stuff as bio-media in our filters, because those objects are carrying millions of beneficial bacteria.
