Hello
So I plan to have a 180 gallon tank 6 x 2 x 2

and have the following fish in it:

1 jardini arowana
2 indo tiger datnoids
1 ntt tiger datnoid
6 clown loach
1 green terror
and maybe a few other fish down the line

Would the following be sufficient filtration?

Eheim 2217 (rated for 160 gallons) + Penn Plax Cascade 700 (Rated for 60 gallons) + Hydro Sponge Filter V

Should I add another sponger filter or maybe another canister?

At this point I would really like to try and save on money. So far I have all these filtration canisters and sponge running on a 55 gallon growout so not spending anymore money would be a plus. That way I can just move all of my filtration over to the new tank.

I'm not an advocate of over filtration, but with that many potentially very large fish on that size tank I wouldn't be satisfied with that filtration. Combined I don't think they'd be creating much water movement or turning your tank over more than about twice an hour.
Add an FX5 and you're good to go, or an AC110 or a pair of AC110s.

Of course another canister would do the trick, but you can't underestimate a good sponge. Add another one and see what it does. I think you do need to add something.

180, DIY wet/dry filter............For under $100, a wet/dry can be built for a tank measuring 125-180............
