Is this filtration over kill or just enough for a saltwater tank
75 gallon sump fx5 and an eheim profesional 2 with uv for a 180 gallon tank I am currently looking for a overkill protien skimmer.

Yup, just keep up on your water changes and youll be fine with the sump

Just curious why could the canisters work against me? Can I put drift wood in a salt water tank?

Canisters hold on to nitrites and nitrates building them up over time to toxic levels. Your LR cant kill the nitrite and nitrate that gets into your filters so it just builds and builds. I have never heard of anyone putting driftwood into a sw tank, although I dont see why it would hurt anything. Unless nitrite and nitrate can seep into the wood. Someone else might be able to shed more light on your driftwood question than me.

Yes, certain algaes will "eat" nitrites and nitrates but I wouldn't bank on them cutting out ALL of the nitrite and nitrate. Yes mr2 protein skimmers are good skimmers and easy to use

If you wanted to do driftwood and plants you could do a brackish setup instead of full blown salt. I know there are alot of people that use driftwood and plants, and brackish water has alot of cool looking fish aswell. Might be something you would be more interested in. Just a thought
