So I'm going to be condensing my tanks due to the fact that I'm moving to a smaller apartment. Would a 90 gallon be overcrowded with a pair of dempseys, two severums, a blue acara and a firemouth? I'd rather not have to get rid of any of these fish if I don't have to.

That would be fine as long as no one breeds. The jacks may pick on the acara.

I agree the jacks could pick on the acara, but it depends on how aggressive yours are. Mine wouldn't touch it. Shed prob hide, but there are others that would destroy it. In my experience I have seen a wide range of personality in JD, but most seem to be on the mellow side, so you may be alright. Severum and firemouth would be nice tankmates, you could also try something like a pictus or sengeal polypterus to add a little variety to your tank.
