Is this overstocked?

I think your fine with two O's and pleco in a 125g but thats going to be it for fish. It will also depend on what you are going to have for filtration also since O's use alot of bio-load.
 
I think that is completely fine. You normally would have around that sized tank for a breeding pair.
 
I would say a 125 is the min I would use for a pair of O's. The pleco is a waste factory and will IMO do more to affect the water quality in a negative way then you'll benafit from it keeping the tank clean. I would like to see a 150 and I think a 180 is perfect.

To answer you question directly you'll be ok with a 125 provided you have good filtration your maintenance is kept up and you do weekly 50%+ waterchanges and don't over feed.
 
I think you'll be more than fine. Just try to get some O's that are compatible. Not all of them play nice with others. I had a murderous Oscar a couple years ago that killed 15" common plecos and another Oscar.
