I'm thinking of trading in my two 75 gallons for one 72x24x17 aquarium from glasscages. But is this still to small for endi's and ornates? How many years would it take for one to reach that size?

I think you should be fine. It'll probably take a few years for them to grow out to their max size. I have the same size tank and I'm also planning on doing the same.
