You identified them yourself. They're jack dempseys, aka Rocio octofasciatum. There's no other "species" of them, just one.

You can tell by the operculum (gill plate). On males there are several spots of blue, on females it's almost solid blue, or at least a lot more. Males also get larger and have longer fins.
 
do you know why the same fry would have some that are very light and some that are very dark..almost convict looking?
 
just individual differences. not enough to be a different variety or something.

you'd know if you had an EBJD, the body would be a bright powder blue with black spots, or a gold jd (aka xanthic jd) where the body would be completely yellow.
 
there awsome cichlids, but yea man not really different species, just different variants , nothing biggie, all have bassicaly the same mentally and aggressive traits.
