Will this jack dempsey show more color as an adult or will it keep its color pattern that it has now?

Fish in general coloration depends greatly on their mood.
This female would go from tan like yours to almost black in breeding dress.
It may be stressed atm, did you just get it? Give it some hides, a couple days to settle in and should color up some.

said... also colour of decor in the tank and lighting can play a part.. if the tank is very bright lit with bright substrate the fish will try and blend in with its surroundings

I’ll change my substrate to black since it’s white. I don’t believe he’s stressed because he’s the bully of the tank.
