looking good, and thats how they normally mature, normal citrinellus dont start to peel until they reach about 4in, the mass breeders that supply the chain stores with their midevils feed them a food with hormones in it to make them peel earlier so that they look more appealing to the customers
 
well not ANY coloration but any combination of orange, white or black. And like Sarah said, real labiatus and citrinellus don't color up as quickly as the lfs ones do. What I've found is that true quality fish will not color up as soon but they will ultimately have much better colors once they do fully color up. :)
