how do they make these gigantic schools without any of the angels or discus pairing off with each other?

Unless you get all males or all females, I don't think there is much you can do about them pairing off. I think if the water parameters don't meet "breeding" standards, they're not going to pair off...I think.

overstocking (to an extent)
dont feed live food
make sure the tank doesnt have hiding spots for a pair to shag lol

They will pair off if their if both sexes are present. They will even breed in conditions that are not ideal for hatching.
