I have read many times that large plecos will hatch on to fish and suck off their slime. Is this true?
Stories?

Very true, i had one red sailfin pleco who hated my 8" rtc so much hed latch onto the top of his head and sucked a ring raw when i finally noticed.

i would imagine this stems from hunger... some smaller ones have done it to discus, and sometimes they do it to bichirs. I dont think its really an aggressive behavior except in the case of tojo's RTC and maybe a couple others..
 
Ime, it's mainly caused by hunger. I've kept plecos with almost everything, and I kept them fat and happy and no such instances.
 
I have never had any problems with my plecos doing that. I have even kept discus with bigger plecos even. I have heard that story though.
 
My brother in law had a Goldfish Tank (Orandas, Bubble Eyes, Black Moors) with 2 Commons, These things were WELL Fed. One day when my bro in law came home every goldfish in the tank was dead on the bottom of the tank with a ring on each ones side or belly. Don't know which common went on the rampage but something pissed someone off. He brought the commons to my place and dumped them in my Koi pond while I was at work thinking they'd be fine in their (Koi were 14"+) . I had to hunt the little buggers (bout 9" a piece) down when I got home and donated them to the LFS. Makes me wonder if the Gibby in my tank will ever have a go at one of my Oscars. He almost as long as my Biggest O.

So do they slowly eat the fish afterwards? What's the reason they kill for? Food? Territory?

Keep them well fed and you should be able to keep it with anything...once in a while you might get a super aggressive pleco that bullies everybody but that's just an individual personality trait and not specific to one type of plecos or all plecos.
