They do sell Led strips that come with a little module that lets you operate them via remote. These you can link and or cut to length, but its more of a DIY project. Not hard at all though.

Led Strip Light Waterproof 600leds 32.8ft 10m Waterproof Flexible Color Changing RGB SMD 5050 600leds LED Strip Light Kit with 44 Keys IR Remote Controller and 12V Power Supply https://www.amazon.com/dp/B01IQOV13G/ref=cm_sw_r_cp_apa_i_m7a4CbXFDXR7S

Fluval has new Bluetooth versions of their lights that you can control all of them at the same time from your phone. You can even set up a five different light level daily programme like Finnex 24/7 lights have, so when set up would never have to bother with them again.

If you use the strips like above you're going to need a LOT of them if you how to be able to grow even low light plants...
And with the amount of heat the produced, completely lack of heatsinking and not much airflow if you have a hood it would probably be a good idea to figure out a way to cool them. I've just checked mine depending on where I test, running at about 115°F to 150°F. Not hugely hot, but likely impacting output and longevity enough to be worth some simple changes to cool them.

For my setup, if I do the same again, I'm debating between a bunch of Aluminium U tubes, or getting a couple aluminum plates and spacing them out from the hood a little with the strips attached to them.

I think I used 7 5 meter rolls, I can't remember. On a 4'X2'X2' I'd call that low-medium lighting.
