I can't seem to find it now but I bought a 55 gallon tank 3 months ago. DRY tank but rocks still in it I just set it up for the first time and a bunch of empty shells floated. But one and I'm on day two and its got a small baby attached size of two salt grains and mom is the size of a small pea.. how did she live with no water and do snails breed fast????

Most of the time the tank has to be bleached before all snails are gone, or so i've heard. If you overfeed, they breed like crazy! I fed my fish every other day and I still had a snail explosion from some plants, they're not overbreeding because I don't feed the tank that much, but there's still more than I'd like to have crawling around. They just showed up after the plants have been gone for months.
Possibly good news for me, I hear cherry shrimp will eat the jelly like eggs in my tank so I plan to add a few and see if its true. I initially set the aquarium up for the shrimp anyhow.

I'm not that worried about them being im going to put covicts in the tank for breeding for my catfish food

Sometimes I think snails are little magicians. I have had this happen to me before. I assume you have pond snails. Unless the substrate is completely dry. You won't kill them all. Even if there is a little moisture, the eggs can still hatch and live off of the bacteria that can grow in moist substrate.

I also have a feeling its possible they can create resting eggs that can withstand it being dried out. But I'm not sure about that yet.
