Hi! I've been planning my dream tank for a while, I want some ideas and suggestions for stock. I love, love, love!! longear sunfish! But I would like some other native stock as well, that wouldn't eat them and take over the tank! I was thinking yellow perch or maybe a bullhead cat. Any thoughts?

I would think you'd want some other sunfish to put in with the longears... pumpkinseeds, orangespotted, redspotted, warmouth, etc. The perch should get along with just about anything... at least those that I've kept have. A small bullhead (although they can grow quickly) or madam would add some variety.
