Looking to start a forum

As title says, I'm interested in starting an online forum (nothing fish related so no worries about competition :) ). I have absolutely no experience with web development and am wondering how hard it's going to be to get this thing up and running. Since MFK is the most active and successful forum that I frequent I figured I'd ask for some of your thoughts.

Firstly, any recommendations for a good (and affordable) web hosting service and forum script?

The forum is going to deal with some some pretty specialized scientific stuff and I image membership is probably going to stay fairly small. I'm not going for anything fancy - mostly just a place to try and get some community interaction going. I think the things that are really going to be important for members are ease of use, stability and an effective search feature. Also, I don't want any random outside advertising. If things go well I'm ultimately hoping to secure some relevant sponsors and subject-specific advertising.

I'd appreciate any suggestions you may have.
