OK, so I have "just a few" empty enclosures here...

I have Three 20-long tanks
Two 4'X2'X2' enclosures
Three 10-gallon tanks
One 48" X 16" X 16" tank
and a 2'w X 36" high, X 18"D screen front enclosure.

Stocking ideas, stuff to ask for for Christmas?

For the 20-long get an African cichlid shell dweller tank. You can put quite a few of those in one of those tanks.

Make sure you have a sand substrate though.

In the other 20-long you can house a Polypterus senegalus for quite some time until it is time for a larger tank.

How about a small to medium sized Chameleon species for the 2'w X 36" high, X 18"D screen front enclosure?
 
Hmmm...I'm not sure! I did have a Senegal Chameleon once in a similar sized enclosure. You might be able to squeeze a Jackson in there.

i was just about to say, thatd be perfect for a cham :)
 
How about an Ophisaurus for one of the 4' enclosures? They're pretty awesome, and not too many people keep them.
