Here's something I've always been having trouble with. How do you maintain a culture without the food rotting and flies coming in? Or at least, how often do you guys change the food? Pictures would be good. Thanks!

Maintain a culture of what? Roaches, crickets, meal worms, fruit flies, etc...? Just put what they eat in with them and it should be gone without it rotting. If you have left overs then use smaller amounts of food.
