I have several 10 and 20 gal tanks that have no covers for them. I also have several sheets of stainless steel and aluminum laying around with a few scrap pieces of acrylic(but none big enough to be the cover itself). So I was wondering if it would work and be safe for the fish to make the covers out of the metal and just cut a hole then rivet a acrylic piece in for the light to go on? If not ill just bite the bullet and goto the glass place and get them to cut me some pieces.

Considering the price of glass covers for 10 and 20g tanks, just get them instead. You will be paying just a dollar or 2 more for piece than at a hardware store for cut glass, plus you get a hinged door, handle, and plastic strip to place filters where you want.
