Moody Oscars

Why are my Oscars so Moody? It seems like my Oscars are bipolar. Whenever I scoop food from out of their tank or do anything in their tank, they go from happily swimming around to sitting at the bottom of the tank for hours. Why is this? I haven't had them for long so maybe they are scared of me.
