1. Like Renteria said, 4-5 would be better.
2. I'll copy Renteria again, but I'll include peaceful dwarf cichlids(rams come to mind)
3. When your angels are big enough, they will begin to pair up. Move them to a bare-bottom 20-29 gallon with a sponge filter and a spawning site(clay brick, terracotta flower pot, piece of slate, etc.) With good food and water, they will usually just breed. You can then try parent raising(some angels have lost this ability), which is my favorite, or you can remove the parents and artifically incubate them(this is the reason some angels can't raise their own spawn, we bred it out of them).
4. I haven't noticed any difference in temperment, but some morphs grow slower(double darks, double zebras) and others are weaker and get sick easier(blushing). These are tendences.
5. I don't know of any good breeders in Tennessee(not that they aren't there), but I love Aquabid,

Then it's hard to stop. You might also try to find an aquarium club in your area. Almost all clubs have atleast one person who breeds angelfish.
