S. elongatus, I've only seen them kept once, in A very large a tank in Germany. They don't get as big as some, about 12" max. But they are faster than a choir boy at a bishop's convention and almost as jumpy. I never owned one but I would love a small school.
i have kept quite a few serra species: elongatus, rhom, sanchezi, irritan, mac. my 7" rhom currently is the most active and outgoing. first piranha i have owned to chase a finger like a cichlid. the mac was a close second. my elong sucked.
I don't think there can be a sure way of evaluating the activity level of piranhas, however, there should be like the top 5 or something (not in any particular order that is).
