If I had several tanks, all set to the same temperature ph etc. Could I pump the water from the tanks into one giant wet/dry or canister? I know the obvious problem if one gets sick it would spread the disease, but are there any other risks? There are some pros like I could add another tank and it would be cycled almost immediatly. Share your opinions/insights.

you absolutely could, and should. i have 5x10gal, 4x27gal and 4 33gal all running off one sump. it dosent get any easier. sumps are ten times better than cannister's in EVERY WAY. and by using ONE sump you can use ONE pump, ONE heater and so on. its a no brainer.

Sounds like something to look at. And if I had to dose a tank individually I could keep a HOB filter cycled for that situation.

You'll find this is how pretty much all shops operate, with different sumps between Africans and Americans (varying pH and hardness).

Shops that regularly take in fish from members of the public will (or should) keep them in a self filtered tank or system to avoid exactly what you've brought up, introducing disease.

It's a great idea and maintenance is made much quicker, as well as cycling as you've brought up. Provided you quarantine new arrivals in a self-filtered tank for around 4 weeks prior to introducing them to the system you shouldn't face too many problems.

Except when it comes to saving space.:D

A sump would be the best choice, easy to regulate tank fill with overflows. Not sure how you would regulate tank fill with a large canister.

the pro of having the tank system outweights the con. Just make sure you have a separate tank for sick fish.

I keep flowerhorn in a central system and noticed that the color of the fish are not as nice as compared to having each fish in a one tank one filter.
