they normal do eat there old shell. it is a great source of calcium. I would leave it in a bit longer and see what happens.
 
Leave the shell in there. For the first day or two after a moult their shells are soft so they hide. After it has hardened they will come out of hiding and eat their old skeleton. It helps strengthen their new one. My crayfish just molted a couple days ago and the only parts he didn't eat were his claws.
 
just leave it but after a week and nothing happened take it out.
 
It will typically take four or more days before they will eat it. I agree if its been there longer than a week, take it out.
