I have just a male and a female jack dempsey in a 29 gallon, the water is 80 degrees. but my question is she was already mating with another male. Will she switch to mating with mine?

She should, I would be more worried about your male... Some times they need a little competition to get them going... If you still havent got them to spawn in about a month I would stick a male convict in there and I bet they will spawn...
