I'm addicted... Currently have a 75G. My budget is about $2,000. I'm looking at Glasscages.

What should be my next tank?

I don't think it would be hard at all. Just do some practice runs with smaller pieces before making the big build. There are enough guides, threads, videos, etc out there that will show you how to do it and walk you through the process.

Cheapest way to make an aquarium (in order to maximize the size of your tank with the 2k budget), would be a plywood build with viewing windows. There are a bunch of those builds on this forum.

If not, I would go with the 300 wide that glasscages offers or look around on craigslist/these forums and see if you come across a good deal on a 300+ gallon tank that's used but still in good condition.
 
Silver aros need a beyond big tank. I suggest looking on classifieds for cheap big tanks, you will be shocked

Also if you're on a budget, be aware that it's not just purchasing a tank, it's also filters, sump, plumbing, pumps, heaters/controllers, substrate, etc... Even going the cheap cheap canister route you'll need three for a big tank plus associated media. Craigslist really depends where you live, big tanks here in the middle of the country are extremely rare and just as expensive as new usually (or really stupid dimensions) while on either coast they seem to be a dime a dozen.

I've done some research, especially with the Silver and Jardini, my understanding is that 300g would be enough?

I have never built my own glass tank, but from reading other peoples' experience, it can be very challenging dealing with very, very heavy glass and getting everything squared before the adhesive sets. Building a 200gal+ tank is a different animal than practicing on a 55gal. Like I said, I have no experience in this but, just an fyi
