Need help with my peacock eel

Hey everyone! So I just got a new peacock eel. Can someone help me how to determine the sex of a peacock eel?? And which substrate is recommended? Sand, gravel, cobble?
I'm gonna throw it into my 55. Thanks for your help!

I would go with a substrate like sand, don't want rough materials that can injure if your fish wants to dig

I made sure that all the cobble in my tank were round and smooth.

I went with the sand substrate like you said. Its about an inch and a half deep. And the eel isnt digging. Im guessing that's normal?
