Need input on a new RBP setup

So basically, I have one 6.5' RBP. I had him in a 29 gallon for about 6 months, and his tank sprung a terrible leak! (about .5 gallon/Min) So for now a 7' Pleco and him are in a 110 Liter plastic tote. I hate having to use a plastic tote, but I have no choice for now.

Anywho, I am going to purchase a 125 gallon tank soon(ish) and am interested in making an amazon style tank with 5 or 6 RBP. What I mainly want some input on the substrate, water flow, live plants, and other decor.

I was thinking about using cheap sand underneath, with black gravel on top. The only reason I want to use cheap sand, is because to have a deep enough substrate of all black gravel would could some decent $$$$$$$.

I def want to use live plants. I understand that they will get nibbled on from time to time, and that's ok. I wanted to use a crap ton of jungle val plants because they are cheap. I'm not too experienced with plants, so give me an idea of what route I should go.

For rocks and caves, I have access to an unlimited supply of shale, all shapes and sizes. What rocks and structures should I use to make the RBP's feel at home??
 
EDIT: Also, I know I would need to at least double the filtration for my tank size. What would be the cheapest route to go? I only have experience with under gravel filters, and the kind that hang on the back (penguin bio wheel). I have no clue how a canister style filter works.

as for plants, java fern, anubias, crypts are all good choices if you aiming for a low tech tank. I used pool filter sand for my substrate. as for hard decors I like driftwood better, if you do go with rocks make sure they won't alter your water pH
 
for a large tank I wouldn't recommend UGF at all, canister or wet/dry would be best way to go as they can provide more room for bio media compare to HOB filters.
