GEEZ Rayman!! Why didn't you just ask me directly? I'm a lapidarist.

Check with the GIA (Gemological Institute of America). They'll provide you with course information, certification requirements, and listings of training resources near you for the particular field you're interested in (faceting, gem identification and appraisal, gold-smithing and design, etc.).

There are alot of 'hack' type training programs offered out there. But, if you're looking for accredited training and certification, the GIA is the most important first step.

You might also want to check out some of the trade magazines out there like:

The Lapidary Journal
National Jeweler
Professional Jeweler
Modern Jeweler
JCK Magazine (covers more of the business side of the jeweler's professions)
