Need Stocking Help for 29g Biocube

I have a cycled 29 gallon biocube with fake coral and decor as well as a 3" non-live sand bed. (yes, yes I know...it looks gorgeous and I love it)

Currently it is a freshwater tank but the fish in there are moving into a 55. I planned to restock it with neons and Rams but have since decided I'm going to get my feet wet in saltwater.

HOWEVER....I am going to do a strictly fish only tank. No liverock, no livesand.

I don't know much on saltwater fish so I took a list of what my LFS has and am trying to research them, but it's a bit daunting to know where to start and how to stock as I have no idea how big each gets, what gets along with what, what would be the stocking limit and...whatnot.

Any suggestions please? Here is a list of what the LFS stocks. The ones with the * by them are some I am hoping will be suitable for my cube and I can choose to stock from.

Percula Clown *
Valentini Puffer
Lawnmower Blenny *
Firefish Goby *
Coral Catfish
Emerald, Red and Hermit Crabs *
Sea Slug *
Strawberry Pseudochromis
Peppermint Shrimp *
Royal Gramma *
Various Damsels including Jewel, blue, black and white striped ones
Yellow Tang
Psychedelic and Green Mandarin Goby *

I didn't catch the name on this one but it's a solid black fish with 2-3 bright aqua blue dots along the top
 
I think any combination of the * would work, all except the Mandarin.

Without live rock/sand it will be more "difficult" to keep your water parameters steady though.
