New 100 with 50 sump

Hey All,
So I got my new 100 gallon up and running. Been running two days now. Here are pics of tank and the sump. First chamber has a filter sock and two baskets I made to hold bio media. One filled with scrubbies the other filled with bio balls. Second chamber has a tray set up for my carbon. Next is the bubble trap. Final is for my return pump. Any suggestions on what to add to this. This is my first sump but Don't want to just fill everything with bio. Just put the doors on and am going to stain them dark brown. May add some trim work as well. Should I Add more mechanical other than the sock. I used the first section for bio as it was bigger than the other. Should I lift bio up and put a air stone underneath it?

holy crap..that's lots of filter for 100g.
 
nice setup man.. youur gonna have super clean water in that 100gal.. what are you gonna stock in there?
 
Stocking will be two tiger o's, turquoise severum, sengal bichir. Hence the reason I wanted good filtration. This was actually a reef set up before I got it. I love the tank and sump set up now that I have one. Will post more pics soon. The stand needs a little trim work to fancy it up a bit though.

So I have some questions now. I am used to my 56 with a HOB and a sealed top. Not much water evap. With my new tank and sumo it seems I am adding water every day. No not that it seems but I am actually adding water every day. Almost 3 liters. Is this normal seeing as my sump does not have a top and my tank only has a canopy and does not have a full glass hood? Should I add a top to my sump and just cut out for the overflow drain and return etc. Should I add a cover under my hood? I know there are no leaks anywhere. Trust me I checked. What would you all suggest. Also water parameters are still cycling. Amonia now maintaining at 1 and Nitrite has started spiking at about 5. Nitrates are also coming up now around 15 to 20. I think I am getting close. Hopefully Nitrites will start to drop in a couple of days and both them and ammonia hit zero soon. Also, I added some air stones under the bio media to up the O2 amount.
